Get ready, raw egg-lovers. We’re not yolking when we say that there’s a new egg-citing pop-up in town. From June 26th to July 7th, 2023, the elusive “Phantom Egg Shop” will be taking roost at JR Kanda Station.

Popping up more unexpectedly than your hangover after a night in Roppongi, the “Phantom Egg Shop” is a feather-ruffling project from the “Japan Egg Rice Research Institute”. Yes, you read that right, there is an institute researching the art of egg over rice – only in Japan.

Why Did the Egg-lover Cross the Road?

The curiously named “Phantom Egg Shop” was born in the heart of the coronavirus pandemic in April 2020 when this egg-ceptional shop (sorry, last one I promise) began as a way to support egg farmers who had lost their outlets due to the outbreak.

Initially, it was a weekend-only gig in Sugamo, Tokyo. However, like a snowball rolling down a hill or a salaryman on his third Highball, it quickly gained momentum. With successful pop-ups at major Tokyo train stations and city department stores, it’s now making a shell-shocking appearance at JR Kanda Station.

Variety is the Spice of Life, and Eggs

So, what makes the “Phantom Egg Shop” more fun than a karaoke night in Shinjuku? It’s all in the eggs. The shop sources freshly-laid eggs directly from producers across Japan, letting customers mix and match to their heart’s (or stomach’s) content. All for a flat rate of 900 yen for 6 eggs, irrespective of the type you choose.

Ever seen a blue-shelled egg? Or how about a yolk with the fragrance of yuzu? You can find these and around 100 different varieties of eggs, with 20 or so available on any given day.
